WEAR NOW>>>> WEAR LATER

This Cupcakes & Cashmere dress has been a staple piece this summer.  I am always on the hunt for the perfect LBD and LWD.  I got this one back in the Spring at Boem.  I just found it a Nordstrom Rack for 50% off!!  I will wear it into the fall with just a few changes.  



I found a great olive Bomber jacket in the Boys section at Target while I was doing a little Back to School shopping with Jackson and Nat.  The Boys XL fit me perfectly.  I also linked the Women's Bomber from Target.  I added booties to make the look a little more "fall".  And the Twine & Twig Cowrie Collar still works perfectly!

CAULIFLOWER TACOS

I got this delicious recipe from Natalie at her blog designers bags and dirty diapers.  I have to admit that I was VERY hesitant.  I have never liked cauliflower- the raw texture honestly used to gross me out.  The way Natalie described them- I knew I had to try them!  AND we all know I love anything with Buffalo sauce on it!  I made just a few simple changes for us.  These are great for Meatless Mondays or Taco Tuesdays. You will not be sorry!

1 head of cauliflower, cut into small florets
1/4-1/3 cup Frank's Buffalo Wing Sauce
2 tbsp unsalted butter, melted
1 tbsp garlic powder
Preheat oven to 425.  Toss cauliflower, butter, wing sauce and garlic powder in bowl until cauliflower is coated.  Place on tinfoil lined baking sheet and roast for 45 minutes, turning once halfway through with spatula.

small soft taco shells
refried black beans, warmed 
queso fresco, crumbled
2-3 ears grilled corn
pickled purple onions
sliced avocado
Sriracha Mayo
limes, sliced

Build your tacos and top with a little Sriracha mayo and a squeeze of lime juice on the top.

Healthy Breakfast + Avocado Pesto + Summer Cocktail

I recently started working with a trainer/ nutritionist.  She told me that I really needed to start eating breakfast.  Not easy for me but I'm trying…. These are a few things I have been eating in the mornings.

Breakfast
Plain Greek Yogurt
Honey
Sliced Peaches
Sliced & Toasted Almonds
Sprinkle of Cinnamon
Layer ingredients in bowl and enjoy!

Avocado Pesto 
2 small avocados, diced
1 1/2 cups basil
1/2 cup sliced almonds, toasted
Juice of 2 lemons
2 cloves of garlic
3-4 tbsp olive oil
Salt & Pepper
Place all ingredients in a food processor and blend well.  For lunch or dinner I put this on zucchini noodles.  For breakfast this is great on Ezekiel toast with hard-boiled eggs and some hot sauce.


My friend Erica came up with this cocktail. I added the lime to cut the sweetness.  It's super refreshing and tastes like summer in a glass but without all of the calories of a pina colada.
Summer Cocktail
2 oz Coconut Rum (I use Malibu)
Dasani Sparkling Tropical Pineapple
Juice or 1/4 or 1/2 of a lime
Mix all together over ice!

Enjoy the last moments of summer!

Packing for Vacay

So I might sound spoiled when I say this BUT I have not been away from the kiddos since December.  Allen and I are need of a serious break.  We are headed out of town with some of our best friends next week for a much-needed trip.  Our friend's family has an amazing house in Virginia with a pool, hot tub and gorgeous views.  And let's be honest- that along with good food, good friends and cocktails are all you really need for a great vacation.
We are not going out AT ALL so everything I am packing is pretty casual.  Bathing suits and cover-ups during the day, shorts or easy dresses at night.  Easy. Done.

Grilled Okra

If you are in Charlotte, you have probably been to Foxcroft Wine Shop.  If you have been there you might have tried their amazing grilled okra.  It is a personal favorite of mine so I needed to try it at home.  
1 1/2 lb Fresh Okra
1/4 cup Melted Butter
2-3 tbsp Lemon Pepper
Fresh Lemon Juice 
Sriracha Aioli
Wash and dry okra.  Place in grill basket and place grilled basket over large cutting board. Drizzle melted butter over or brush with a pastry brush. Sprinkle lemon pepper over okra.  Grill okra until slightly brown and a bit charred.  Remove from heat and squeeze lemon juice over.  Serve with your favorite aioli.

I'm back {CHEERS!} + Frozen Coconut Mojito

I'm back!!!!  I have been so busy with kids, family, events etc…. Blogging has been the last thing on my mind lately.  I am excited to get back into it and share some things with you all!  I'm trying to change a few things about my blog but that is a sloooowww process for me.  I don't think I will ever be a blogger that can post every day or even every other day.  I will post when I have something fun or yummy to share!
1/2 cup Bacardi Rum
1/2 cup Malibu Coconut Rum
1/4 cup Cream of Coconut
3/4 cup Fresh Lime Juice
1/4 cup Mint Simple Syrup (recipe below)
2-3 cups crushed ice
Put all ingredients in a blender.  Puree until all combined and blended. This makes 2 large mojitos.

Mint Simple Syrup
1 cup of water
1 cup of sugar
1/2 cup of mint leaves torn in half
Bring to a boil and simmer until sugar has completely dissolved.  Let cool for an hour.  Pour through a mesh strainer and discard mint leaves. Refrigerate any unused portion.

Açai Bowls

After seeing dozens of pictures and posts on Instagram about Açai Bowls, I decided to make some for breakfast one morning last week.  I bought the frozen açai packets in the freezer section at Whole Foods.  Prepare those per the packet directions. Run the frozen packet under warm water for 10 seconds.  Remove from plastic and place açai in blender or food processor.  Add half of a sliced banana and 1/4 cup of coconut water or unsweetened almond milk. From there you can basically add whatever you like to your bowls.  To mine I like to add the following:
Greek Yogurt
Granola
Almonds
Almond Butter
Fresh Berries
Pomegranate Seeds
Shredded, Unsweetened Coconut
Hemp/ Chia Seeds
Drizzle of Agave

You could also add:
Other nuts and seeds
Chocolate or carob chips
Dried fruit
Honey
This makes the perfect breakfast food to keep you full and full of energy through the day!
